Needing a good source of fat, fiber and protein during the day? Here is a great snack to have on hand or maybe a good addition to your breakfast. Blend it all up and pour into small muffin cups and keep refrigerated for an easy satisfying snack that's easy on the blood sugar.
- 1 cup of almond butter or cashew butter (no sugar added)
- 2 cups of unsweetened shredded coconut
- 1/2 cup of coconut oil
- 1/4 cup of cocoa powder
- 1/4 cup of coconut sugar
- 1/4 cup of cacao nibs
- 3 tbsps of flax seeds (grind before adding)
It will be runny after blended in food processor but will solidify in the refrigerator - you have to keep these cold to keep them solid. You can experiment with the ingredients to your liking (i.e. more shredded coconut). Enjoy!
