Clean Eating Meal Plan 2

I hope that the meal plan last week was helpful to you. I would love to know if you tried any of the recipes out and what you thought about them. Our favorite from last week was the crockpot beef stew.

The weather will be in the 70’s this week for us so I thought a nice light chicken salad would be perfect for my lunch for the week. This was a recipe given to me by a friend. It goes perfectly on a bed of lettuce or by itself.

Also, I wanted to explain why I don’t meal plan for specific days….it is because life happens. I like the option to evaluate my day and see which recipe would fit best with my energy levels. I save my more involved recipes for when Jake is home or I have some help with the babies. We also like to have a night where we go out to eat, or maybe just have (paleo) waffles one night!

1 cup frozen corn (if you tolerate)

Chicken Salad Recipe

2 chicken breasts (or equivalent to 1 pound of cooked chicken depending on size)

2 celery stalks

3 green onions (or 1/2 white onion or equivalent)

1 green apple (I use Golden delicious)

2/3 cup of golden raisins (or 1/3 cup raisins + 1/3 cup grapes)

1/2 cup sliced almonds (or equivalent chopped nut of choice)

1/8 teaspoon black pepper

1/2 teaspoon curry (more or less to your liking)

3/4 cup mayonnaise (We use Primal Kitchen Avocado Oil Mayo!)

Chop it all up or pulverize in a food processor to a consistency of your choosing.  Best served after being chilled in the refrigerator for at least a couple hours to let all the flavors blend together.
